I have a GE JGBS23WEL3WW gas range. The oven will not shut off. I had to turn off the gas. And unplug to avoid an eventual melt down. I suspect the thermostat ? If it is, can you guide me to it?

I agree that the temperature control has gone haywire . The burners and main top have to be removed to replace the thermostat. I merely provide diagnostics here and a limited supply of technical manuals that I have collected over the years. I do not have anything specific for your model of range, but the other range manuals you will find in the Repair Manuals Forum will give you an idea of how this is set up and the blowup of your model is HERE so you can see how the burners are configured..

The correct thermostat for your model is shown for you to order below. The sensing bulb and capillary tube is very delicate, so take care not to kink anything when uncoiling the new stat from the package. It should be pretty straightforward once the top is up, and no gas work will be needed, so leave the gas on but the power off to the range. Just remember to remove the top burners before attempting to raise the top or you will do serious damage to the gas tubing.
