Our Kenmore dryer completes a drying cycle pauses for a few minutes then starts up again on the next cycle. Stops and starts its way all around the dial.

After reviewing your dryer's electrical schematic, I have concluded that the timer is defective. A new timer is inexpensive and easy to replace as long as you swap wire for wire to the new timer. Wait till you have the new one in your posession then begin the repir process by removing the rear cover to the control panel. The timer knob simply pulls off to reveal the 2 hidden mounting screws for the timer. The new timer is shown below and you may click the pic to order-
